1 1/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp. vanilla extract
3 cups quick oats
1 2/3 cups (11 oz pkg.) Nestle Toll House Butterscotch flavored morsels
Preheat oven to 375F degrees.
Combine flour, baking soda, cinnamon, nutmeg and salt in a small bowl.
Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in a large mixer bowl. Gradually beat in flour mixture.
Stir in oats and morsels.
Grease 13×9-inch baking pan. Spread dough into prepared pan. Bake for 18 to 22 minutes or until light brown. Cool completely in pan on wire rack. Cut into bars.
Good with milk or fruit juice, for a good fall treat serve with hot apple cider.

This is modified from my Nestle Toll House cook book, I added a little nutmeg to intensify the flavor of the cinnamon and ginger. I prefer this in bars as opposed to coookies because it stays softer. Normally, I use regular unsalted butter, but a butter substitute would make this a more heart healthy treat (especially with the quick oats).
I’ve also heard applesauce can be substituted for butter, and although I haven’t tried it, it sounds yummy! I’d use plain or granny smith applesauce so the bars don’t get too sweet, but cinnamon applesauce might give it a little kick as well…maybe reduce the amount of cinnamon to 1/4 tsp in that scenario.
